I really loved baked tofu - it's delicious, easy, packed with protein, and full of flavor. I love making a big batch so that I have it to nibble on when I want a healthy and filling snack from the fridge. For me, cold baked tofu from the fridge is every bit as good as hot baked tofu fresh from the oven. Like cold pizza!
Sometimes, you just gotta get your mojo going! One of my all-time favorite baked tofu recipes is the Zesty Orange Mojo Tofu from Viva Vegan, by Terry Hope Romero. It doesn't require marinating in advance, which makes it even easier. Better yet, while the tofus bake on one side, you have time to mix together the marinade. Then you flip the tofus, pour on the marinade, and bake a bit longer.
It takes about an hour total, but most of that time is just the tofus doing their magic in the oven while you are off reading a book or snuggling your cat. As promised, this tofu recipe is quite zesty indeed - it's packed full with flavor - so I just served it with a giant mound of broccoli and some super delicious green beans from the farmers market.
